NEW Publication – Soy Flour Carbohydrates via Enzyme Hydrolysis

In a recent article, Dr. Al Loman and Dr. Ju demonstrate that kinetic models can be applied to the enzyme hydrolysis of soy carbohydrates (for improved digestion).  They have described a time, enzyme, and substrate dependent model equation to show the progression of cellulase, xylanase, pectinase, and alpha-galactosidase on the hydrolysis of complex soybean carbohydrates.  Likewise, a saturation type model was used to determine the soybean composition by using only enzyme hydrolysis methods (as compared to the acid hydrolysis methods).  From these results, comprised of multiple enzyme systems, a recommend optimal enzyme mixture has been suggested.  The optimization result and kinetic equations can be found in the May issue of Enzyme and Microbial Technology.
