Recipes

Vegetable Soup:

Ingredients:

  • 1 packet Vegetable Soup Mix
  • 32 ounces of Vegetable Stock/Broth
  • 2 cups of cooked Quinoa or Rice
  • Frozen Vegetables
    • 1 bag Frozen Mixed Vegetables
    • 1 bag Frozen Broccoli
  • 1 tbsp Jarred Garlic
  • 1 Large Yellow Onion

Instructions:

  1. Cook quinoa or rice
  2. Sauté yellow onion, garlic, and bell peppers
  3. Bring vegetable stock/broth to a boil
  4. Add frozen vegetables, onion and garlic, and quinoa/rice
  5. Reduce heat and let simmer for 30-40 minutes
  6. Season to taste and enjoy

Sweet Potato Burrito Bowls:

Ingredients:

  • 2 cups of cooked Quinoa or Rice
  • Protein of choice (tofu, chicken, etc.)
  • 1 cup of Black Beans
  • ½ cup of Canned Corn
  • 2 Roasted Sweet Potatoes
  • ½ cup of Salsa
  • 1 cup shredded Cheese
  • 2 Bell Peppers
  • 1 White Onion
  • ½ cup of Jalapeños

Instructions:

  1.  Cook quinoa or rice
  2. Sauté onion and bell pepper
  3. Roast chopped sweet potatoes (seasoned to taste) for 20 minutes at 425 degrees
  4. Cook your chosen protein
  5. Add all the ingredients together in a bowl and enjoy

Broccoli Casserole:

Ingredients:

  • 16 ounce bag of frozen broccoli cuts
  • 1 can Cream of Mushroom Soup
  • 1 cup of White Rice
  • 1 stick of Butter
  • 16 ounce package of Velveeta Cheese

Instructions:

  1. Cook rice
  2. Place broccoli, cream of mushroom, and rice into a casserole dish
  3. Chop up the butter and Velveeta into squares
  4. Mix all of the ingredients together in the casserole dish
  5. Cover with foil and cook at 350 degrees for 45-60 minutes

Breakfast Balls:

Ingredients:

  • 1 cup of Rolled Oats
  • 2/3 cup of Nut Butter of choice
  • ¼ cup of Dark Chocolate Chips
  • 2 tbsp Honey

Instructions:

  1. Blend dry oats into a flour-like consistency
  2. Combine nut butter, honey, chocolate chips, and oats into a bowl
  3. Roll the mixture into balls
  4. Refrigerate for 30 minutes

Fruit Smoothie:

Ingredients:

  • ½ cup of Milk of Choice
  • 1 cup Frozen Strawberries
  • 1 Banana
  • 1 handful of Spinach
  • Ice (optional)

Instructions:

  1.  Combine all ingredients and blend until desired consistency
  2.  Add ice for an even thicker smoothie
